I just cut my own up. The hinds get deboned and used for roasts and steaks, backstraps are the same, everything elso goes to the grinder for sausage.
It is a great thing to do if you can do it with friends or family. Me and my friend have done 3 White Tails and 3 Mulies so far. I also had to do a Whitetail by myself. Once you get use to it a deer can be done by yourself in about 3 hours or less depending on how well you trim and what you take for sausage meat.
