Bear sausage ?
I'm looking for some recipes to try with some spring bear from the freezer. I have recipes for other Venison sausage, but may not be suitable ? Meat has a distinct aroma and flavour.

I do not have a recipe for you, sorry, but I can tell you that the best bear sausage I ever ate was actually 50/50 bear and moose. The lean moose meat and the fatter bear meat seemed to be a fabulous combination for a nice juicy sausage.
Is Gatehouse a member here? (I think so.....) Anyways he is both a professional chef and a bear hunter so he might be able to help. Good luck to you! Doug |
