There was an Asian restaurant in Alberta a few years back which was raided by fish and wildlife officers. The meat cooler was found to contain several skinned out & dressed coyotes.

I personally would have to be pretty hungry before I ate a coyote even though if well cooked there should not be any health issues.

Dog meat is commonly eaten in several countries, Thailand for instance. I imagine that coyote may even be better, as they are on a wild food diet, rather than some of the crap they pass off as dog food these days.

I wouldn't go out of my way to kill a coyote for dinner, but if I was starving, I'd dig right in..
