Drying/smoking game.

What methods do you use for different game? Which smoker? Prefered flavorings?

I built my own smoker out of an old coldspot fridge. Peeled off all the plastic seals screwed in 7-9 stainless steel racks put in a hotplate in the bottom and made a little vent and there it is.. Best salmon smoker around wish I still had it today. For game meat you can't beat stuffers in Langley for spices and mixes. Hmmmmmm Careful of the newer fridges lots of plastic and crap try and find an old one... Good luck

I use my convection oven. I get all my jerky spices from Halford Hide in Edmonton. They have a big selection and are cheap. $ 7 to do 25 pounds of jerky. My favorites are Teriyaki and Peppered with some liquid smoke added.
