Grouse Recipes

Anybody know of a easy but delightful "Camp Recipe". I am camping out this weekend and never cooked one up fresh.

2 cups of supporo ichiban chicken soup
1 fresh grouse

boil water and cook ichiban noodles
fry or cook grouse over lunchtime campfire, cut grouse into small strips once cooked and add to the ichiban noodles

quick and easy for out on the trail!!!

grouse recipe

If we ever get some sunshine to make the shaggy manes pop up you can make quite a nice soup from diced grouse meat, chopped shaggy manes and dehydrated chicken stock. Boil and simmer the grouse in the stock until done and then add the shaggy manes and cook a short while longer. A bit of cheddar cheese melted in gives it a bit of added flavor or any spices you think suitable.

I also like grouse cut into fingers, and fried with a bit of Drambuie added at the finish. Not very much Drambuie as it adds a powerful flavor. Probably other liquers would work and one day intend to try some made from pears.

My camp grouse is very simple to prepare:

1) Take the breast fillets and score about 1/4" apart with a sharp knife at right angles to the grain on both sides.

2) Fry up a pound of bacon and retain all of the bacon grease in the pan.

3) Dredge the grouse fillets in spiced white flour (prepare at home and put in a plastic bag) and deep fry in the very-hot bacon grease.

4) Eat!

This is a good idea for many grouse recipes, as it will keep the breast from curling up on you, and it looks cool, too!

My favorite is similar to .303's except I like to sprinkle lemon pepper on both sides of the breasts and start them cooking in the frying pan;then when they are about half cooked I add a can of cream of chicken soup and let them simmer until done.Rice goes excellent with this.

Doesn't keep the lead count any lower for me;my .22 is a semi-auto!!!

Holding a little higher keeps the lead out...

My best recipee for grouse so far , allthoug I'll be trying Cariboo's out at thanksgiving:

Fry up onions in butter, until tender but not brown.
Remove onions, add a little oil (so you have butter and oil)
Increase temerature until it (almost) smokes, fry breasts with salt and peper until they take on some darker color and then add onions and fry at slightly lower temperature until meat is cooked trough - sound complicated but isn't.

Heres another version using bacon and mushroom soup. Dice the bacon and fry until almost done. Dice the grouse breasts and add. Add diced onions and green peppers along with a can of sliced mushrooms. Use pepper and seasoning salt to taste, and finish off by simmering in a can or two of mushroom soup. Served over a bed of steaming rice.... um-um good... That's what was on the menu for tonights supper....
