Depends on the steak. For chops I just salt& pepper and dredge in flour and fry in a pretty hot cast iron pan in oil,and don`t cook the shit out of them like my Mom used to!Round is tougher sometimes so you can slow cook em in a tomatoe sauce with onion& garlic ect. and serve over rice or noodles or mashed spuds.Or you can slow cook in mushroom soup, same thing. My favorite for tough steaks is to make a rich, dark steak and mushroom stew, pour it into a pie plate and cover with a pastry top, brush with egg, bake at375 for 30 minutes.Or go buy that frozen puff pastry ,instead of pie crust.Bloody marvelous.Carefull though, you might end up with the job full time.

deer steaks

KMH your sig line says it all...........kill it and grill it.

If the animal was properly cared for after the kill (and wasn't eating spruce buds or something), the meat should be both tender and tasty.

Season the steaks (seasoning salt OR Montreal Steak Spice, and garlic powder) and BBQ on high. Sear it on one side, flip it over, use BBQ Sauce if you wish, and either leave it 2nd side down until done, or (if using BBQ sauce) flip it one more time, drop the heat to low and cook the BBQ sauce side for about a minute and a half. Serve no more cooked than MEDIUM. Medium rare is better, for a juicier more tender steak.

Thumbs up deer steaks

For a deer shot late in the season that may have a gammey taste, try pounding them to make them a little more tender. Season with salt and pepper. Take corn flake crumbs put in bowl add steak spice or garlic powder or whatever you may like mix together. Dip steaks or chops in egg whites only roll in crumbs and fry in pan at med to high heat until cook medium or medium well sreve with mash potatoes veg and gravy. Great cuttlets

What I do is marinate game meat with italian salad dressing. Wash the steaks or why with cold cater to get all of the excess blood out, place them in a bowl and cover them with the salad dressing. I usually like to leave them marinate for 4-5 hours. Then all you need to do is grill the steak on a moderate flame to whatever level of done that you like.
Serve the steaks with some garlic and sour cream mashed potatoes and steamed asparagus. Yum.
