Moose hoof soup

A couple years ago my wife gave me heck when I didn't bring the hooves home with the rest of an elk.

She is from Germany and says in butcher shops there they sell calves' shanks and hooves for soup.

So this year I brought her home four moose hooves on the shanks.

We boiled them and skinned them, removed the outer hoof covering and froze them..

Yesterday we thawed one out and pressure cooked it, then she removed all the bones.

Just had some moose hoof soup for lunch. Chinese style, with broth over noodles and sliced green onion and the boiled hoof and tendon and meat in pieces as well.

I have always been partial to beef tendon soup in Chinatown and this beats it by a 100 miles!

It sounds good MD.

Growing up on the prairies we ate a lot of that sort of food that was made from different parts of an animal that today would be viewed by some as garbage.

The biggest differnce is that most of the original settlers in Saskatchewan were from war-ravaged parts of Europe where they know what a totaly empty belly felt like. The surprising thing is that most of these meals, like your hoof-soup, roasted chicken feet, or headcheese taste really, really good!

moose hoof soup

Cariboo not to mention bake heart of beef or pickled beef tongue
sliced thin and made into sandwiches for school. Cheers Northcountry
