It sounds good MD.
Growing up on the prairies we ate a lot of that sort of food that was made from different parts of an animal that today would be viewed by some as garbage. The biggest differnce is that most of the original settlers in Saskatchewan were from war-ravaged parts of Europe where they know what a totaly empty belly felt like. The surprising thing is that most of these meals, like your hoof-soup, roasted chicken feet, or headcheese taste really, really good!
