spice mixes for smoked meats?

anyone know where to get recipes for the different spice mixtures for making pepperonni, kubasa garlic coil ect..something that would have the proper proportions ect.

what do you guys who make your own product use? the prepared mixes from your outdoor store?

I use some old family and neighbour's recipes and also some of the commercial ones but not those sold at sporting good sstores.. Look in the yellow pages for butcher's supplies. Many butcher shops use prepared seasonoings.

For smoked meats I use the recipes that came with my Luhr Jensen Big Chief smoker, and I am guessing that these are probably also available on the net.

For fresh sausages etc I make it up as I go along, and cook up a small "patty" to taste it, then add more seasonings or whatever, try another patty, etc, and when it is just right, then I case it up.

I think the suggestion to try out butcher supply shops is a good one, for their binders.
