zucchini

This one isn't game but if you have zukes in your garden give this a try.

Select zukes in the small to medium size range. 10-12 inches long , 2-3 inches through.

Wsh zukes and then cut in half length wise keeping in mind you want them to lay level on a roasting pan skin side down.

Hollow out the center of each half down it's length by removing the seeded portion.

In a dish mix thoroughly (no lumps needed):

Feta cheese.
Butter (Ratio is 2 parts cheese to one part butter.)
1 Minced garlic clove (increase for a big batch if you like)

Add:
Several fine diced sundried tomatoes pieces
Italian olives (ripe) diced (about 10 olives)

and mix in evenly.

The quantities are a little iffy because the size and number of zukes you do may vary. Just make enough.

Fill the cavities in the zukes with the mixture until lightly mounded and top with chopped parsley and ground pepper.

Bake at 350 for 35 to 45 minutes depending on size of zukes.

Goes great with your barbecued ribs, steaks, whatever.

Good since I posted this I've added a diced jalapeno to the mix. Vary it any way you want I suppose.

Outstanding, on the repeat list for sure, no feta so I used Ricotta, and overdid the sundried tomatoes a bit(my fault, I love em), also added a touch of balsalmic and Olive oil. Fantastic side dish with salmon, highly recomended. OS
