butcher supplies

grinder is on it's way . just got the call from cabelas cost 460 inclusive for the 1 hp 400.00 less than the price locally .
anyone have any suggestions on the best brands for the ingredients for sausage , pepperoni and who carries them . whats the best sausage making book out there .

Stuffers Supply Company in Langley is great.

They have a good selection of seasonings and binders as well as any type and size of casing anyone would ever need.

They also have a MASSIVE sausage recipe book in PDF format you can download for free off their website if you want to start from scratch.

I'm still using a cheap little kitchen job It works fine for smaller batches but it is slow. Here's a pic (couple years ago) of some Mennonite Style Farmer Sausage rings (moose) I made up ready to go into the smoker. I got the recipe somewhere in cyber space

hmmmm the 1 3/4 hp grinder from Cabelas will be my next investment..sweeet item

I have made 50lbs of breakfast sausage from my second blacktail , and it is great . bought the spices from stuffers and they are easy to deal with in person, Very good staff. I think i will just do the 10lb batches next time. 50lbs was alot of work.

Bear pepperoni

Just finished up 18 lbs of bear Pepperoni, half Garlic and Cracked pepper, the other Hot (from Stuffers). Used some store bought mix as we had GC for the store. Was surprised at how good it tastes.

Used the ginder, Waring Pro, for this and will be buying a Vertical Stuffer next. The grinder just takes to long.
