meat cutting.

Hi all, just wondering who you guys use to cut your game. The outfit I used this year did a poor job. I'd like to think this is an isolated thing but I don't feel I'll go back. I don't want to mention the name but it was in the L.M.
I will say that two years ago we used a fellow from Liloette [ Gary's meat cutting] and he did an awsome job but I here he went out of business.

We cut all our own game. It is easy to learn and any "mistakes" can be ground into burger.

By doing our own not only do we save time and money we are also sure that all the meat we get back is ours.

North Surrey Quality Meats, is the cutter of choice for myself when I dont have the time or the energy to do it myself. Very clean, properly cut, and you will only get your own game back PERIOD!

It's home butchering at my place.

My wife does it. I'm the wrapper.

She likes to make the cuts she wants to cook and in the portions she wishes to cook too, so that works out fine.

aYup! Here as well. Unfortunately for me, I somehow managed to get a bit of a reputation for getting the job done right (guess 35 years plus experience counts for something these days...). Thus far my processing room (separate kitchen set up just for the task) has witnessed the following "customers" this season:
Only one moose (thankfully)
4 Whitetails
9 Fallow Deer
3 Blacktails and counting...

Suspect that number will rise a bit (already 2 more Blacktails in the wings, and tags still chasing), especially after this next round of Alberta action!!

If you want the job done right, do it yourself!

I try and do my own meat, was shown by my hunting partner plus he has all the tools of the trade, meat saw and all.... But lately I've been getting my meat cut up north as for the price of it you just cant go wrong! This year I think it was .40per pound....

The best why is to do it yourself if you can then you know, you got everything! I hate hearing story's of butcher's ripping guys off, or some butchers will not cut the game the way you ask! Like one that will not do ribs

Butchers

just had to pay 250 for 130 lbs of deer,30 lbs of sausage included in that at 2.00 a lb and he was charging around 3.00 lb for pork that he used. hate to think what they would charge for a big moose .would need to take out a loan . me thinks that a lot of buthchers are gouging since a lot of them are no longer doing game .
So i ordered a 1 hp meat grinder from cabela's.ca#809502 .It's selling for 399.99

You must learn to do your own meat-cutting and sausage.

Our latest order just came in from Stuffers Supply Company in Langley - SUPER-GREAT people BTW - and for around 100 bucks including shipping this order contains enough binders, seasonings and casings to do up over 300 pounds of fresh sausage and pepperoni.

yup, I paid $360.00 for my moose this year, No sausage. I also had it hung at a friends farm in his cooler. The butcher had a lot of complaints regarding how long it was hung {12 days} and told me after I picked it up that he would not have cut it knowing how much work it turned out to be. I also wanted the bones for my dogs but when I picked up the meat all that was there was one leg bone and pieces of the spine in one box, not frozen, All other butchers I've used had the bones somewhat cut to small frozen pieces. I won't be going back!

dont trust many butchers. My advice is learn to do it yourself. I did

You don’t say where you are from, so of course that is a factor……

I have always done our own, with an exception of once when the game was harvested in Quesnel and it didn’t work out to bring it home. We took it to Cariboo Country Sausage, which is on the left of #97, heading North, before you drop down into Quesnel. Hans does a good job, and makes awesome sausage, as well.

So, if you live there, or wind up with game there that needs doing, drop in and see him. You get back what you take in, good or bad……

Thought maybe that was the case, as your last meat cutter was from there. But the Lillooet reference made me unsure.

Anyway, I think Hans is still in business in Quesnel, looked like it the last time I was by that way. So if it so happens that you're stuck with game on hand when in that neck of the woods, it might be worth while to check it out. His rates were very reasonable when we were there, a few years ago.

Thanks for the heads up on the Stuffers website. Looks like a good one. I was just up in your area. Paid a visit to our son in Horsefly on the way from a successful Mule Deer hunt in AB. I've been thinking of getting some meat cutting and sausage supplies and start doing some of my own. That website looks like a good starting point.

i have been doin my own for the last three years now (every since i became a butcher) some days i just dont feel like cuttin my deer up but i cant see takin it to some one else when i can do it myself for free...cut up my bro in laws deer tonight actaully...and did mine on tuesday so in the last 5-6 days i have done two deer...cut 3 total this year so far
