I just cut my own up. The hinds get deboned and used for roasts and steaks, backstraps are the same, everything elso goes to the grinder for sausage.

It is a great thing to do if you can do it with friends or family. Me and my friend have done 3 White Tails and 3 Mulies so far. I also had to do a Whitetail by myself. Once you get use to it a deer can be done by yourself in about 3 hours or less depending on how well you trim and what you take for sausage meat.

My own bandsaw, grinder, sharp knives=my own meat I gave up years ago on butchers, they are just too busy to take perfect care, and too expensive. My saw does 4 -6 deer a season plus pork sides and has paid for itself 5 x over. The only way to go.

I use Sumas meats between Chilliwack and Abby, they are busy but have done a fantastic job on every animal I have ever taken them. Talk to Ullie. they used to have an ad in the regs book. Years ago I would take game to Saunders, too bad they are no longer around, I tried Ennis a few times but for reasons not worth mentioning I decided I needed another butcher. I was lucky to get to know Ullie quite well and will continue to get my animals done there.

I realize this is well after the need, but having neither the means or space to cut my own game, I have tried all the usuall outlets in the past. One day I'll graduate to owning my own place. Anyhow I used Johnstons meats in Chilliwack to do my doe earlier in December, and I must comment on how impressed I was(I even got a tour of the shop). The pepperoni was second to none, and I cannot complement them enough on the packaging. Cost was comparible, but really, if your a hunter you have to factor that in when you buy a tag. Anyhow, they are on the Vedder rd. across from the pub, south of hwy #1. Unfortunately they are only able to take meat during reg. working hours. Hope this helps out.

Hey Steve, Surplus Herbies carries the tapered hubbed pulley to go on the most common grinders, add a 1/4hp electric motor (commonly found in old junked furnaces) and a belt and you can eliminate the "Crank Man" and probably save on the beer costs

Just got my whitey back from backcountry meats in Fernie. I'm really happy with it. Awsome jerkey, to die for jalapeno cheddar smokies, double garlic coil, and hot pepperoni. I got around 100lbs back in all. Cost was $300 even.
I did my elk, then dads and then his whitey and mulie. Sometimes its nice to let someone else do it!
